You have been an incredible life-changing inspiration for me. I wanted to make this lifestyle change but I didn’t know where to begin. By learning how to plan and cook savory vegetarian dishes, I had no trouble transitioning because I discovered how flavorful and satisfying eating this way was. I just finished the 6 modules of your Plant-based Cooking 101 class, and it was the perfect follow-up to my recent stay at TrueNorth. The course was easy to understand, extremely helpful, and put together well! I have been eating a plant-based diet for 18 years and much of the information in this course was new to me. I would not have left anything out -- it was all useful, including the food storage tips, knife skills, meal planning, beautiful down-load sheets, and of course the recipes! I thank you for presenting such a thorough and enjoyable class. I think it’s ideal for helping TrueNorth patients stay on a health-promoting diet after they leave.
